Puliyodharai or tamarind rice.

This is one of the traditional  tamil brahmin style rice. Tamarind rice is very easy once we pre cooked the pulikachal or spiced tamarind paste. There are different methods of making this paste. Today i am going to tell you one of the methid of  making this rice. Let us see how to make this.

Preparation time approx 30 minutes.

Ingredients.

For pulikkachal or tamarind paste.

  • lemon sized tamarind soaked in water and take juice of it.
  • 1/4 cup ground nuts or peanuts
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder. ( i like spicy rice.  )
  • 1/2 tsp jaggery powder
  • salt to taste.
  • 1/2 tsp asafoetdia.

 

Dry fry and powder

  • 2 tbsp coriander seeds.
  • 1.5 channa daal
  • 1/4 tsp methi seeds
  • 5 to 6 chillies. ( adjust according to your taste),

For seasoning.

  • 8 tbsp thil oil or seasame oil.
  • 1/2 tsp mustard seeds.
  • 1 tbsp channa daal
  • 5 to 6 red chillies.
  • few curry leaves.

For rice.

  • 1 cup raw rice or basmati rice. cooked grainy. It should not be mushy.

 

Method.

Cook the rice  grainy and spread it in a plate and add 1/ 2 tsp thill oil and mix and keep aside.( Take care rice should not be mushy)

Squeeze the tamraind and take juice.

Dry fry the ingredients mentioned above and powder . Keep aside.

Pulikkachal or tamarind paste.

Heat a pan . Add oil. When it is hot add mustard seeds.When it started crackling add peanuts and channa daal . Break the chillies and add. Fry this till the channa daal and peanuts  become brown. Add curry leaves. Now add the asafoetida, turmeric powder, red chilly powder. Saute. Add the tamrind juice and jaggery powder. Add salt to this. Let it boil and  become a thick paste. Oil will float on the top. At this stage switch off the stove. Keep this aside.

Dry fry and powder the ingredients mentioned above and keep aside.

How to prepare tamrind rice?

Add powdered spices to cooked rice and mix well. Add salt only for rice. We have already added salt to the tamarind paste.

Now add 3 tbsp tamarind paste to rice and mix well.

If you need add little more paste and adjust the spice level.

Serve with karuvadam or fried pappad.
