The Cauliflower is a vegetable of choice if you’re on diet. Cauliflower is low in carbs and can replace potatoes, rice and pasta. It can be eaten both raw and cooked for different benefits.
We have to make Cauliflower rice first and use this as a base for the dishes. Today i am giving you a pulao made with cauliflower rice. I have used only 1tsp of oil to make this dish.I paired this with tomato , onion raita.
Let us see how to make this pulao.
Preparation time approx 15 minutes.
- 1cup of mix veggeis like peas, corn, chopped beans, chopped carrots and capsicum.
1 chopped onion
3 pods of crushed or grated garlic. ( you can increase or decrease the quantity of garlic)
1 tsp grated ginger.
1 inch cinnomon
1 bay leaf
Making cauliflower rice.
wash and clean the cauliflower.
Grate the cauliflower in a grater or using a food processor pulse it. Cauliflower should resembles small bits like rice. Do not over pulse it. Then it will become mushy.
Wash and clean the veggies and steam cook it . Do not over cook.
In a pan add the cauliflower rice and fry it tille the raw smell goes on low flame.
In the same pan add 1 tsp oil .
When it is hot add jeera and fry , Then add cinnomon, clove, bay keaf, pepper corns, star anise.
saute for few seconds and add ginger, garlic . Saute for few more seconds on low flame.
Now add the chopped onion and fry till it become transperant.
Add the cauliflower and steam cooked veggies . Add salt.
Mix well and cook on low flame . Keep on stirring well.
Let the cauliflower cook. It may take 2 or 3 minutes.
Garnish with chopped coriander leaves.
Serve with Onion, tomato raita.
