Coconut mithai is a sweet dish made with coconut, milk powder and sugar. We need not cook or bake this sweet. We can freeze it and make. With in few minutes an exciting sweet will be ready. Even your children can make this . Let us see how to make this.
Preparation time approx 20 minutes.
Freezing time 1 hour.
- 1 cup of coconut pieces. ( peel the brown skin with a peeler. Only white part shoule use)
- 1 cup of milk powder.
- 1/4 heaped cup of powdered sugar.
- 1/2 tsp cardomom powder.
- few drops of pink colour.
- 4 tbsp crushed pistachio graules
- 1 or 2 tsp milk (if we needed)
- ghee for greasing .
Take 1 cup of coconut pieces. ( use little tender coconut. not very hard one). Using a peeler scrape out the brown part of coconut. Use only white part of coconut.
Ground this in a mixer with out adding water.
In a mixing bowl add coconut, milk powder, cardomom powder. Mix well and make a batter. If your batter is so dry then add 1 tsp milk. make a soft batter.
Divide the batter in to 2 equal parts.
In one part add little pink coclour. Mix well.
Take a chopping board and keep it. Cut 2 pieces of aluminum foil in the size of your chopping board.
Apply little ghee one side and keep the foil on chopping board.
Now take the white portion of the batter and keep it over the foil. Roll it in square shape. Keep aside. Take the other foil pieces apply ghee and keep the pink colour batter over this and roll it. Make a square shape. Both white and pink batter should be same size squares .
Now slowly flip the white square above the pink square . ( or pink over white).
Press it lightly.
Now slowly roll the aluminium foil to get a cylinder shape piece.
Sprinkle the pistachio granules all over the sweet. Roll it to spread the pistachio evenly.
Now slowly roll the sweet in foil and close both the sides. Keep this in the fridge for an hour.
After an hour take it out and slice it.
