Boondi ladoo is one of the popular sweet from South India.It is an unavoidable sweet during festivals, marriages, baby shower, engagements etc. Two tricky part of making this ladoo is the correct consistency of sugar syrup and the shape of boondi.I have explained step by step recipe with pictures. Let us see how to make this seet.
Preparation time approx 30 mintues.
- 1 cup channa daal powdder or besan or kadala mavu.
- 1/2 cup water to mix.
- little yellow colour
- a pinch of baking soda
- 1 1/4 cup sugar. ( if you like more sweet maximum 1 1/2 cup you can add)
- 1/2 cup water.
- 1/2 tsp cardamom powder.
- 2 tbsp broken cashewnuts
- few raisins
- 4 clove.
- 1 tbsp sugar candy (optional ) I have not added.
- 1 tbsp ghee
- oil for deep frying.
Mix besan water, colour and baking soda.
Make a smooth batter. Batter should be little thicker.Keep aside.
Heat oil for frying.
Now take a boondi karandi or a perforated ladle. Hold it over hot oil.
Keep the stove on medium once the oil it .
Pour a ladleful of batter over the karandi and spread it out or tap the karandi. The boondis will fall drop by drop.
Keep on stirring the boondi’s.
Take out once it is half cooked. Do not fry the boondi’s crispy.
Fry all the boondis and keep aside.
Heat ghee and add broken cashews fry till it became brown. In the same ghee add raisins and fry. Keep aside.
In a pan add sugar and water. Melt it.
Cook till it comes one thread consistency. ( Take little syrup with spoon.Touch the syrup with a finger tip. Press the finger with other finger. Open the finger. It will come like a thread.)
Switch off the stove.
Now add add cardamom powder, fried cashews and raisins, If you are adding sugar candy you can add now. Add the fried boondi’s to hot syrup. Mix well. With the back side of a ladle mash it little. Keep aside.
When it is slightly hot itself make small ball size ladoos.
Do not allow the mix to become room temaparature. Then we will not able to make ladoos,
