Happy new year to all of you. After a long break posting here. Let us start the new year with a sweet dish. I always like healthy food. I have avoided eggs since i am not enjoying it. I tried carrot and cocoa cake. Cocoa powder was not available at home. So instead of cocoa powder i used Boost . Let us see how to make this easy yummy without failure cake.
Preparation time approx 10 minutes.
Baking time 45 to 50 minutes.
- 3/4 cup all purpose flour or maida .
- 3/4 cup grated fresh carrots.
- 1/2 cup melted un salted butter.
- 1/2 cup sweetened consended milk.( milk made).
- 2 tbsp boost. If you are using coco powder use 1tbsp( as per your taste )
- 2 tbsp powdered sugar.
- 1 tsp honey
- 1/2 tsp vanilla essence
- 1/4 tsp baking powder.
- 1/4 tsp soda bicarbonate
- a pinch of salt.
- 2 tbsp chopped walnuts. ( i have opted almonds)
- 1 tbsp kismis.
Apply melted butter on the baking tin. Sprinkle little maida all over the tin. Keep aside.
Pre heat the oven at 180 degrees celsius.
In a big bowl add all the ingredients and slowly with a spatula mix it. Do not mix vigorously. Today i have added chopped almonds instead of walnuts.
Pour this in the bakin tin.
Bake it at 180 degree celcius for 45 minutes.
Temperature and time may vary oven to oven. After 40 minutes check the cake. Insert a wooden stick and see. If it comes out clean cake is ready.
Allow the cake to cool.
Once it is cool take out and cut it in to pieces.
