I was having some leftover vegetable pieces after making vegetable soup. I thought of using this vegetable pieces to make chutney for Dosa. We can make this chutney with in 15 minutes. You can use any vegetables like carrot, capsicum, cabbage, zukiini, radish, chayote, turnip etc. This healthy chutney goes very well with dosa , Idly or any other tiffin items. Let us see how to make this chutney.Preparation time approx 15 minutes.Ingredients.
- 2 tbsp channa daal
- 1tbsp urad daal
- 4 tbsp mix veg pieces (fined chopped) I used cabage, carrot, capsicum, zukiini.
- 1 small size onion
- 1 small garlic pod
- 4 or 5 pudina leaves (optional)
- 2 tbsp chopped coriander leaves
- a small piece of tamarind. ( half amla size).
- salt to taste.
- 2 red chillies
- 2 green chillies.
- 2 tbsp grated coconut. ( optional)
- 1 tsp cooking oill for frying.
- 1 tbsp cooking oil for seasoning
- 1/2 tsp mustard seeds
- 1/4 tsp asafoetida.
- few curry leaves.
Method.In a pan heat oil. Add both the daals and both chillies . Fry till daals became golden brown. Take it out and keep aside. In the same pan add onions and saute for few secondS. Now add garlic pod. Fry it. Then add washed chopped veggies . Fry this for a minute. Let the raw smell go. Now add tamarind , pudina, coriander leaves. Fry again together. If you are adding grated fresh coconut add now. Switch off the stove.When it become cool grind all daals, vegetable mixture with salt. Add water and grind. Don not make this fine paste.Take out .Heat oil and and add mustard seeds. Let it splutter. Add curry leaves and asafoetida and pout over the chutney. Mix this and serve with Dosa , Idly, Aappam, Paratha etc.
