Ginger tomato spicy chutney

Ginger or Inji  is a popular spice with powerful medicinal properties. Ginger tomato chutney is an excellent combo for Idly and dosa. With very few ingredients we can make this chutney with in 10 minutes.

Preparation time approx 10 to 12 minutes.

Ingredients.

  •  2 tomatoes.
  • 1/4 cup chopped ginger.
  • 1/4 cup chopped shallots.
  • 3 to 4 red chillies
  • 1 kashmiri chilly
  • a small piece  tamarind
  • a small piece jaggery ot 1 tsp jaggery powder.
  • salt to taste.
  • 2 tbsp oil.
  • 1/2 tsp mustard seeds.
  • 1/2 tsp urad daal
  • 1/4 tsp asafoetida.
  • few curry leaves.
  • salt to taste.

Method

In a pan add 1 tbsp oil and heat. Add chopped shallots and chopped ginger.

Let then fry for 1 minute. Now add tamarind, and salt. Fry this. Then add chopped tomatoes. Fry till the tomatoes are mushy. Add both the chillies , jaggery piece and salt.

Fry everything. Remove from stove and let it cool down. Grind this smoothly. If it is very thick add very little water to grind.

Heat a pann add 1 tbsp oil. When it is hot add mustard seeds. Let it crackle. Now add urad daal. Let it become brown. add asafoetida and curry leaves. Pour this over the chutney.

Enjoy with hot Idly or Dosa.
