Restaurant style set dosa.

Set dosa is served as pairs. Today I am giving you the recipe of restaurant style set dosa . This dosa is very popular in Karnataka. It is slightly thicker, pillowy softy and holes over the dosa. Unlike normal dosa we are adding murmura, poha and sabudhana, rice flour and maida to make this dosa. Set dosa is a best option for lunch box. We can have set dosa with chutney ,sambar or kuruma. Let us see how to make this easy dosa.

Preparation time approx 10 minutes.

Soaking time 6 to 7 hours or over night.

Fermentation time 8 to 9 hours.


1 cup dosa rice or sona masoori rice

1/ 4 cup whole urad daal

1 cup rice flour

1 cup murmura/ pori

1/4 cup sabudhana/ javvarisi/ sago

1/ 4 cup poha/ flattened rice/ available

1/4 cup maida/ all-purpose flour

1 tsp methi seeds

Salt to taste.

Oil for making dosa.


Soak everything for 6 to 7 hours or over night.

Wash and soak rice separately. Soak sabudhana and poha.

Soak murmura separately.

Soak urad daal and methi seeds. .

In a mixer grinder / wet grinder grind rice coarsely then add sabudhana and poha. Grind and take out. Grind urad daal, methi seeds and murmura. Grind well. Do not add too much water. Mix rice batter, urad daal batter, rice flour and maida. Add enough water to make pouring consistency. Add salt. Mix well with hands.

Keep this for fermenting. At least for 8 to 9 hours.

Heat a dosa pan preferably iron tawa.

Dust with oil. Take a laddle full of batter

Pour the batter on dosa pan. Keep the stove on medium heat.

Pour little oil on dosa and sides.

Holes will start coming

Once one side is cooked flip it. Cook both sides.

Cover this with a lid.

Take out and serve with chutney and sambar or kuruma.
