Pulisseri is a traditional curry with buttermilk and spices. In southern kerala especially in Trivandrum Pulisseri is a side dish for sevai or steamed rice noodles. In our home balance sevai is soaked overnight in Pulisseri and morning we used to have this for breakfast with pappadam. It goes well with plain rice, idly,dosa or any tiffin. Pulisseri is little spicy and tangy. We need medium sour thick butter milk to make Pulisseri. Let us see how to make this.
Preparation time approx. 15 minutes.
Ingredients.
1 cup medium sour thick butter milk.
1/2 cup grated fresh coconut.
6 red chillies
3 green chillies
1/ 2 tsp jeera.
Salt to taste.
Few curry leaves.
Seasoning.
1 tbsp coconut oil.
1 tsp mustard seeds
1 red chilly.
1/4 tsp methi seeds.
Method.
Grind,red chillies, green chillies, coconut and jeera adding little water. Make a paste.
Mix this with butter milk.
Add enough water for correct consistency.
Heat a kadai or deep curved pan. Add oil. When it is hot add mustard seeds.let it crackle now add red chilly, methi seeds and curry leaves.
Pour the butter milk, coconut paste mix .
Keep the stove on medium. Let it boil. Keep on stirring. Take care not to cuddle.
Serve
