Foxtail millet or thinai in tamil is gluten-free. It has many health benefits. It’s good for weight loss,lowers cholesterol and good for heart. I am using millet all most daily . Today I tried foxtail millet kozhukkattai which is a steamed dish. Same method you can use any millet of your choice.
Let us see how to make this kozhukkattai.
Preparation time approx 20 minutes.
Soaking time. 30 minutes
Ingredients.
1 cup foxtail millet .
1/4 cup grated fresh coconut (optional)
Salt to taste.
Seasoning.
1tbsp oil
1/2 mustard seeds
1/2 tsp channa daal
1/2 tsp urad daal.
2 green chillies chopped.
Few curry leaves.
Water 2 cups.
Method.
Dry fry the millet for 3 minutes. It shouln’t turn colour.
Wash and soak this for atleast 30 minutes.
Heat a pan add oil. When it’s hot add mustard seeds. Let it splutter. Add channa and urad daal. Let it become brown.
Add chopped green chillies , few curry leaves. Fry all this and add measured 2 cups of water. Add grated coconut and salt. Let this boil. Strain the millet.
Add millet to boiling water . Reduce the stove to medium heat. Close the millet with a lid and cook. When the water is evaporated switch off the stove. Put this in a plate.
Keep a steamer on gas add water. Let it boil. In the meantime make round or oblong shape kozhukkattai. Keep this inside the steamer. Close it with a lid and cook for 10 minutes on medium fire.
Serve hot with sambar or chutney.
