Power packed Poha.

Poha or flattened rice is  rich in fiber and iron. It’s fiber helps with digestion and preventing constipation. Poha’s low calories and high fiber help with weight loss. Today I made poha for my breakfast adding lot of veggies, black channa, sprouts etc to make it power packed.

Let us see how to make this easy simple breakfast.  I have used white poha. We can use brown poha also to make this dish.

Preparation time approx: 15 to 20 minutes.

Ingredients.

2 cups of poha

1 chopped onion( i used 15 shallots)

1 small chopped capsicum

1 small carrot cut in to pieces

1/4 cup boiled black channa

1/4 cup sprouts.

4 mushroom cut in to half’s.

1/4 cup brocoli.

2 tbsp oil

1/2 spoon mustard seeds (optional)

1/2 tsp jeera

1/2 cup chopped coriander leaves.

2 green chillies finely chopped.

Salt to taste.

You can use any vegetables as per your taste.

Method

Wash and drain the poha and keepaside.

In a pan heat oil add mustard seeds when it splutter add jeera and chopped green chillies.

Now add chopped onions and saute . Now add all the veggies and cooked channa and sprouts.  Add salt to the vegetable . In slow fire saute nicely. When it’s cooked add poha. Add little more salt. Mix well. Saute in slow fire for a minute. Finally add coriander leaves.

Tips

You can add cabbage, ground nuts, soaked moong daal, paneer, tofu, cauliflower  etc.

Add 2 tsp lemon juice.
