Medu Vada
Medu Vada is One of the most popular snack of South India .It is made with urad dhal. Vada sambar and chutney is good combination. My children love this deep fried Vada anytime. Many people can’t make this Vada in round shape and hole will not come. I am giving step by step pictures to show how we will get the round shape and crispy Vada. If we are using wet grinder to make the batter Vada’s will be more crispy on outside and spongy inside. We can use mixi also for grinding this. If we are using mixi we should take care to mix the batter properly to release the air bubbles. Let us see how to make this crispy Vada’s in the shape of doughnuts.
Preparation time approx 40 minutes
Soaking time 1 to 2 hours
Ingredients
- 1 cup urad dhal. ( without skin.) Do not use broken urad dhal
- 2 green chillies or whole pepper.I used green chillies. My children never like the pepper taste in Vada’s.
- Salt
Method.
Soak the urad dhal around 1 to 2 hours in water.
Using mixi or wet grinder grind urad dhal and green chillies into very fine paste
Do not add water. Just sprinkle little water if it is difficult to grind.
Add salt
When you are adding salt the batter will become little loose. So take care not to add too much water
If you are adding too much water we cannot make Vada’s in round shape and it will absorb too much oil.
When you are putting little batter in to a bowl of water it should float. This is correct consistency of the batter.- At this time take out the batter from mixi or grinder and keep in a bowl.
Add the rice flour to the batter.
If you used mixi to grind the batter beat the dough with hands or with an egg beater. Beat it for 3 to 4 minutes. So that there will not be any air bubbles.
Now check the consistency or thickness of the batter.In a deep frying pan heat cooking oil. Wet you hands and take little batter and make a hole in the centre of the batter and put this into hot oil.
Now let it cook in medium heat.
Flip it into other side
When the Vada’s are brown in colour take out from oil and spread it in a tissue paper.
Sambar and chutney are good combo for Vada’s.
