Left over idli upma
Idli upma is made with left over idli’s. I made idli’s for breakfast. I was having some leftover idli’s at night which was refrigerated. I made the upma with lot of veggies, this can be eaten with different kinds of sambar and chutney or it can be eaten plain.
Preparation time approx 20 minutes
Ingredients
- 5 idli’s.(keep refrigerated for the idli to become hard)
- 1/4 cup chopped carrots
- 1/4 cup boiled potato
- 1/4 cup peas.(I used frozen peas)
- 1/2 cup chopped onions
- 3 chopped green chilies
- A small piece of ginger crushed
- Chopped curry leaves
- Chopped dhaniya leaves
- Salt only for vegetables
- 1/2 tsp haldi
Seasoning
- 1 tbsp oil
- 1/2 tsp mustard
- 1/2 tsp urad and channa dal
Method
Cut the idli’s into small pieces and put it in the mixer jar. Just run the mixer for seconds. The idli will powder evenly. Do not powder too much as it will be sticky.
Heat a pan- add oil
When it is hot add mustard
When it starts to crackle add urad and channa dal.
Then add green chilies, ginger and curry leaves one by one.
Add chopped onions. Sauté for few seconds. Now add all veggies. Add salt only for the vegetables.(As the idli has salt)
Add haldi.
When everything is cooked add the powdered idli. Mix well. Fry till the idli powder becomes hot. Garnish with dhaniya leaves.
