Capsicum Rice

Capsicum rice is an easy South Indian one meal dish. This rice is good for lunch box.

I used green bell pepper for this rice, it is not necessary to use only the green peppers any of the other peppers can be used. This dish is a mix of few spices which makes it tasty and spicy also.

This rice can be served with pappad or any kind of raita.

Ingredients

  • 1 cup  cooked rice(use raw rice, basmati or sona masoori rice)
  • 6 or 7 medium size capsicum
  • 2 tbsp roasted groundnuts
  • Salt to taste
  • 1/2 tsp turmeric  powder.

For frying

  • 2 tbsp coriander seeds
  • 11/2 tsp each urad and channa dal
  • 1/2 tsp jeera
  • 2 tbsp dry coconuts
  • A small piece of cinnamon
  • 8 red chillies

Seasoning

  • 1 tbs ghee
  • 1/2 tsp mustard
  • 1/2 tsp urad dal
  • 1/2 tsp channa dal
  • 1 red chilli
  • Chopped curry leaves

Method
Cook the rice and spread in a plate cool it.
In  1 tsp of ghee fry coriander seeds, urad dal, channa dal, jeera, cinnamon stick, red chillies one by one. Take out and cool.

Dry fry dry coconut till it turns brown.
Once this is done powder all the ingredients without adding water.

In a pan, add a tbsp of ghee when it is hot add mustard, red chilli, curry leaves and roasted groundnuts. Then add chopped capsicum. Fry for few minutes. Add little salt for the  capsicum and turmeric powder.

When the capsicums are cooked add ground masala powder and saute it.
Add cooked rice. Add enough salt and mix well.

Tips:

You can adjust the number of chilies according to your taste.
You can add oil and ghee together instead of ghee only.

We can use basmati rice ,  sruthi kolam rice , sona masoori or raw rice.
