Vegetable Rice Sevai
Rice sevai is a very popular breakfast item of South India. With in 15 to 20 minutes we can make rice sevai. I used readymade rice ( noodles)sticks to make this . Let us see how to make this easy breakfast.
Ingredients
Readymade rice sevai or rice noodles 1 packet
1 potato
6 French beans
1/4 cup peas( I used frozen peas)
1 small capsicum
Half carrots
1 onion
1 big or 2 small tomatoes
3 green chillies
A small piece of chopped ginger
1/2 tsp red chilly powder
1/2 tsp turmeric powder
2 tsp oil
For seasoning
2 tsp oil
1/2 tsp mustard
1/2 tsp urad dal
1/2 tsp channa dal
1/4 tsp hing
Chopped curry leaves
2 tsp lemon juice
Chopped dhaniya leaves
Method
Boil 3 liters of water.( Or as per instruction in the packet of sevai.)
Add salt. Add drops of oil.
When it is boiled add rice sevai or noodles
Cook.
Strain the water. Wash the cooked rice sevai with cool water. Strain and keep aside.
Chop all the vegetables into small pieces.
Microwave till it is all most cooked .or steam cook and keep aside.( It should not be mushy).
Chop the onions and tomatoes into small pieces.
Chop the green chillies.
Heat oil in a pan.
Add mustard.
When it started spluttering add urad dal, channa dal, green chillies,ginger,curry leaves and hing.
Let the dals become brown now add onions and saute.
Add chopped tomatoes. Saute till the mixer become dry.
Add cooked veggies without water. Mix well.
Add chilly powder,salt and turmeric powder.
Keep the stove in slow flame.
Add the sevai or rice noodles.Now add little sal for sevai.
Add lemon juice and dhaniya leaves.Mix very well carefully without breaking the sevai.
