Instant Amla or nellikka or Indian gooseberry pickle is very easy to make and can be used immediately. We need very few items to make this.Ideal to serve with any meal, it tastes especially good with curd rice . It is very spicy and tangy. I learnt this recipe from my grand mother. Let us see how to make this pickle.
Preparation time approx 15 minutes.
Ingredients.
- 10 amla or nellikka.
- 2 heaped tbsp red chilly powder. ( you can add more or less as per your tastes)
- a pinch of methi seeds dry fried and powdered.
- salt to taste.
- 6 tbsp thil oil or nallennai.
- 1/2 tsp mustard seeds.
- 1/2 tsp asafoetida.
Method.
Heat little water in a steamer or Idly cooker. Let it boil. Keep the amlas in a plate and steam cook for 7 to 8 minutes.
Dry fry a pinch of methi seeds and powder it and keep aside.
Remove seeds from the amlas and keep aside.
Heat oil.
Add mustard seeds. When it started crackle add asafoetida. Then add amla followed by salt and chilly powder. Mix well. Switch off the stove. Add methi seed powder. Mix well . Store in an air tight container. After a day keep the pickle in refrigerator and use.
