Dahi wale baingan is one of the easiest and yummy side dish for roti and rice. I learnt this recipe from my friend. It is all most the same like khadi. Let us see how to make this.
Preparation time approx 20 minutes.
Ingredients.
- 1 cup curd or dhai with out lumps.
- 1/2 cup water
- 2 tbsp besan or channa daal powder.
- 1 tsp chilly powder
- 1/2 tsp coriander powder.
- 1/4 tsp garam masala powder
- 1 small size chopped onion.
- 1/2 tsp turmeric powder.
- salt to taste
- 200 gram sliced violet brinjal.
- 2 tbsp oil for frying brinjal.
For seasoning.
- 1 tbsp oil
- 1/2 tsp jeera
- little asafoetida
- few curry leaves.
- 1 bay leaf
Method.
Slice the brinjal wash and keep.
Heat oil in a pan add brinjal. Saute them. Add little salt and cover it with a lid and cook on medium heat. Fry in between. Let the brinjals turn in to brown color and cook well. Switch off stove and remove brinjals and keep aside.
In the same pan add oil and heat.Add jeera or cumin seeds, chopped bay leaf, and curry leaves. Saute well .Now add onions and fry well. Now add besan and fry well. Let it become pink. Add salt. Fry for 1 minute. Then add chilly powder, turmeric powder, coriander powder, garam masala powder Mix well and add water. Add dahi or curd. Mix well . Stir continuously. Take not to curdle. Add cooked brinjal and cook for 1 more minute.
Serve with roti or rice.
