Khandvi is a famous Gujarati snack. It is prepared with besan and curd. It is easy to prepare at home.Let us see how to make this snack.
Preparation time approx 20 minutes.
- 1 cup besan
- 3 cup buttermilk or 3/4 cup sour curd and 21/4 cup water mix
- Salt to taste.
- 1/2 tsp tumeric powder or haldi
- 1 tsp green chilly paste
- 1 tbsp oil
- 1/2 tsp mustard seeds
- 1 tsp white thil or sesame seeds
- 1/2 tsp jeera
- 1/2 tsp finely chopped green chillies
- few chopped curry leaves
- a pinch of asafoetida
- few chopped coriander leaves.
- 1 tbsp grated coconut.
Mix everything without lump
In a heavy nonstick pan pour this and cook till it turn thick consistency.
Do not over cook then it is difficult to spread. If you want to know the right consistency , spread little on a small plate and check whether you will be able to roll it.
When the dough is ready spread evenly on the back side of a plate.
Cut into long strips.
Roll from one edge to other.
If you feel strips are longer to make khandvi cut the strips in to two part .Make two khandvi from one strip.
Arrange the khandvi’s in a plate.
In a kadai add 1 tsp oil. Add mustard .When it started sparkling add jeera, green chilly, while thil, hing and curry leaves. Pour over the khandvi
Garnish with some dhaniya leaves and grated coconut.
