Carrot chutney is very healthy ,easy side dish without coconut for dosa, idly, uthappam etc. We need very few ingredients to make this. Let us see how to make this chutney
Preparation time approx 15 minutes.
1big onion chopped finely.
1 big or 1 cup grated carrot.
2 tbsp channa daal
2 pod of garlic.
6 red chillies. ( adjust the spice level)
3 tbsp chopped coriander leaves.
A small piece of tamarind.
Salt to taste.
1 tbsp oil
1 tbsp oil.
1/ 2 tsp mustard seeds
1/2 tsp urad daal
1/ 4 spoon asafotedia.
Few curry leaves.
Heat 1 tbsp oil. Fry channa daal till it turns brown. Take this out . In the same pan add chopped garlic. Fry for few seconds. Add chopped onions. Saute . Let it become shiny. No need to turn this in brown.
Add red chillies saute. Now add tamarind piece and grated carrots. In medium fire saute this. Once raw smell goes take out. Add coriander leaves. Let it become cool. Add salt and grind .
Heat 1 tbsp. Add mustard seeds. Let it crackle. Now add urad daal . Let it become brown add asafoetida and curry leaves. Pour this over chutney. Mix well and serve with Idly or dosa.
