Instant Corn meal Idly

Writing a blog has inspired me to try out variety of dishes at home with different ingredients. I love experimenting with the things I have in my kitchen. I feel my kitchen is my space, my den- cooking needs to be enjoyed and for me it is a stress buster. Innovative cooking interests me the most.

During my last supermarket visit I bought corn meal even though I didn’t know what to make with it.

Corn mean is powdered form of corn is filled with many kind of nutrients and loaded with lot of health benefits.

I tried my hand at corn meal idli. Idli being steamed it is super healthy and it fills you up. Perfect breakfast item with sambar or mulaga podi.

Preparation time: approx 20 minutes

Serves 3 people

  • Ingredients:
  • 2 cups of corn meal
  • 2 cup of curd
  • 1 tsp eno salt
  • Salt to taste
  • 3 tbsp grated carrots
  • For seasoning
  • 1 tbsp oil
  • 1/2 spoon urad dhal
  • 1/2 spoon channa dhal
  • 1/4 spoon mustards
  • A pinch of asofotedia
  • 1 tsp chopped green chillies
  • 1/2 tsp chopped ginger
  • 1 stem chopped curry leaves

Method:

In a bowl add corn meal, salt and 1 cup of curd. With a whisk mix well.

Add the remaining curd little by little. Check the consistency. If it is very thick add more curd. It should not be watery. Keep aside

In the mean time pour some water in idly cooker and boil.  Grease the idly plates and keep.Sprinkle grated carrots in the idly plates..Keep aside.

Heat one tbsp oil add mustard . When it starts to crackle add dhals. When it turns brown add ginger, green chillies, asofotedia and curry leaves. Pour this to the idli batter and mix well.

When the water starts to boil in cooker, pour one ladle full of batter to greased idly plates. Keep the idly plates inside idly cooker close it with a lid and steam cook for 15 minutes.

After 15 minutes open the lid and insert a wooden stick inside idly and check. If the stick is clean without any batter, the idly is ready. Cool the idli’s for 5 minutes and scoop it with a flat spoon.

Pacha sambar or chutney is a good side dish. You can have this any kind of of chutneys, mulaga podi or sambar.
