Aviyal

Aviyal is one of the traditional side dish of Kerala which goes well with plain rice.Its a mix of vegetables and ground coconut masala. In Kerala for all sadyas this curry is a must.  In Tamil Nadu Ada dosa and  aviyal is a great combo.
We can make this aviyal  as a thick side dish or little gravy type. Here I am giving you the recipe for gravy type aviyal.

Preparation time approx 30 minutes
Ingredients

  • 200 grams white pumpkin
  • 100 gram long guard
  • 1 raw banana
  • 100 grams egg plant or suran.
  • 1 drumstick
  • 2 long beans
  • 1/2 raw mango  or soak little tamarind in water and squeeze the juice. 5 tbsp
  • 9 to 10 green chillies or  add half red chillies.
  • Curry leaves
  • 1 tbsp coconut oil
  • 1/2  grated coconut
  • 1/2 tsp jeera

Method

Cut all the vegetables thin long slices. Peel mango and cut in to long slices
In a pressure cooker add 3/4 cup water and add all the vegetables. Cook for 3 whistles. Remove the pressure manually.
Grind coconut ,jeera and green chillies using little water. ( if you are using red chillies you can add now )

Add the grounded coconut to cooked veggies. Just boil. Do not cook long time after adding coconut.
Add curry leaves and coconut oil
Serve with rice or Ada dosa
