Keerai aviyal or Red amaranth curry

One of the traditonal  Kerala dish for plain rice. Red colour keerai is available plenty in Kerala. My children love the taste of this aviyal. Very easy to make this aviyal.  Very healthy also.Let us see how to make.

Preparation time approx 20 minutes:
Ingredients:

2 bundles of keerai.
1 drumstick cut into long pieces
1/4 cup tamarind water or sour raw mango half.
1/2 cup grated coconut
1/2 spoon jeera
5 red chillies
1 tbsp coconut oil
1 stem curry leaves
Salt to taste

Method:

In a pan add the drumsticks.Add 1/4 cup water and  tamarind water. cook the drumsticks. Add little salt.

Wash the keerai  3 to 4 times.Chop  the keerai into small pieces.

Add this to drumsticks. Saute for a minute. Add  little water to cook.Add salt
Grind jeera , coconut and red chillies. Add water and make a thick paste.

Add the coconut paste to cooked keerai. Mix well.

Switch off the stove.

Add coconut oil and curry leaves mix well.
