One of my closest friends taught me this dish long years ago when I was residing in Nairobi. Those were the days with parties and lavish lunches/ dinners almost every other day. One has to think of a full meal course for these parties, the starters, the main dishes, the side dishes and the desserts. There were times when we had no time to even think of preparing difficult recipes as we would run out of time.
This simple pudding was a hit back then and even today. It takes less than 35-40 minutes for preparation and the rest is setting time.
Ingredients
- 3 green apples. Make sure you select the apples that are less sour.
- 400 ml milk
- 3 tbsp vanilla custard powder
- 1/4 cup sugar (I used brown sugar. White sugar also works)
- 4 to 5 tbsp sugar for custard. Adjust according to taste
- 100 to 150 gram thick cream
Method
Peel and cut the apples in to small pieces as show in the picture below.
Add 1/4 cup brown sugar to the apple pieces.
Bake this for 20 to 25 minutes till sugar melts. If you cannot bake it you can make it in an open pan. Baking will be good for better taste.
Keep some pieces for decoration. Mash the remaining apple pieces. Make sure you do not make it into fine paste. Keep this aside.
Now, boil 300 ml milk. Mix the custard powder in 100 ml milk and keep aside.
Add 4 to 5 tbsp sugar to milk mix well. Add the custard powder mixed in milk.
Boil the mixture. Keep on stirring to get a smooth custard. Keep aside
Mix the custard and apple mixture very well. When it becomes cool add the thick cream and fold it well.
Keep in the refrigerator and serve.
