Baked Dum Biryani

I have eaten spicy biryani at restaurant many times. I thought of making vegetable biryani at home. Then I was searching for a good recipe and stumbled upon this. I got this recipe from one of my friend.T his baked dum biryani is very simple and easy to make. There is no hassle and you don’t need to worry about it burning.Tastes heavenly. 

Preparation time plus baking time approx 1 hour.

Ingrediens

  • 1 cup basmati rice soak in water for 30 minutes 
  •  2 cups cauliflower  florets
  • 1 potato
  • 1/2 cup peas frozen
  • 1 carrot small size
  • 1 capsicum
  • 5 big sliced onions
  • 2 tbsp ginger garlic paste
  • Elaichi 4
  • Bay leaf 3
  • Clove 6
  • Cinnamon stick a small piece
  • Pudina chopped 3 tbs
  • Dhaniya leaves chopped 3 tbsp
  • 1 cup curd with put lumps 
  • 3 tbsp milk for soaking saffron
  • Salt
  • Little cashew nuts and raisins
  • Oil .or oil plus ghee
  • Red chilly powder 1 tbsp or as per your taste
  • 1/2 spoon dhaniya powder
  • 2 tsp biryani masala store bought

Method 

Dum Biriyani 

Boil 3 liter of water. Add 1 bay leaf, 2 clove, a small piece cinnamon and salt. When it’s boiling add rice and cook . When it’s 3/4 cooked strain water and keep aside.

Cut the potato, carrot and capsicum in to cubes. And keep aside.

Slice the onions and keep aside

In a kadai add sliced onions and fry till it is totally brown.

From this take 1/4 portion and keep aside.

In the same kadai add ginger garlic paste to remaining onions. Then add 2 bay leaves, cinnamon, elaichi. Fry this. 

Add all the veggies,

Saute

Add salt. Then red chilly powder, dhaniya powder, and biryani masala. Saute for few seconds. Add curd. Saute again.

If gravy is less add little more curd if it’s not sour. Or water. Boil.

Let the veggies cook. Take care the vegetables should not be mushy.

Now,

Take a oven proof baking bowl.

Spread one layer rice.

Then above that vegetable  gravy.

Then above the vegetables  spread  rice.

Above  the rice now spread chopped pudina and dhaniya leaves .

Spread some rice above pudina leaves then vegetable gravy.

 Spread balance rice as top layer. 

Finally spread balance fried onions .

Pour over the soaked saffron in milk as top layer. I used saffron liquid.

Preheat the oven for 10 minutes at 180 degree and keep the bowl inside the oven.

 Bake for 30 minutes.
