Popular Palakkad cuisine which is tangy and blend of country vegetables seasoned with some spices.. Main ingredient for this dish is bindi, brinjal , raw banana. It goes well with mulagoottal or rasam. Let us see how to make this.
Preparation time approx 20 minutes.
- 200 gram ladies finger or bindi
- 200 gram violet brinjal or kathirikka.
- 2 raw banana little bigger size.
- 3 tbsp raw rice
- 8 red chillies.
- 1/4 spoon methi seeds
- a pinch of hing powder
- A small lemon size tamarind
- salt to taste
- 1/2 tsp turmeric powder
- 4 tbsp coconut oil. or any cooking oil.
- 1 tsp mustard
- some curry leaves.
Soak the tamarind in water for little time and squeeze out juice and keep aside.
In a pan dry fry rice, methi seeds and red chillies till it become brown. Powder this and keep aside
Cut the vegetable in little long and keep aside
In a pan add mustard. When it started crackling add curry leaves and little hing powder.
Now add the vegetables, turmeric powder tamarind water and salt. cover it and cook.
Let all the water evaporate. Now add the powdered masala.
Mix well. Take care vegetables should not break.
