Instant rawa dhokla

Very popular Gujarati snack which is very easy to make. There is no need of grinding or fermentation. It is one of the best option for break fast or dinner or  as an evening snack.Green chutney is the best combo for this.

Preparation time approx 30 minutes.

Ingredients.

  • 1 cup of suji or rawa
  • 1 cup of thick curd or dahi
  • around 1 cup of water
  • 1 tsp eno salt or 5 grams
  • 1 tbsp lemon juice. ( if curd is sour  add 1/2 tsp lemon juice)
  • salt to taste.
  • 1/2 tsp green chilli paste of very finely chopped.

For seasoning

  • 1 tbsp oil.
  • 1 tsp mustard seeds.
  • 1 tsp white sesame or thil
  • 1/2 tsp sugar. If you want more sweeter version add little more.
  • 2 green chilles finely chopped
  • 1/4 spoon asafoetida
  • few coriander leaves finely chopped.
  • few curry leaves.

Method.

Dry fry the rawa for 1 minute. No need of changing the colour.

Add measured curd or dahi. Add salt and chilly paste mix well.

Add water slowly and mix without any lumps. Keep aside for 10 minutes.

In the mean time heat water in the idly cooker or any steamer.

Take a round or square shape vessel or baking tray. Apply oil and keep aside.

When the water started boiling in the steamer , mix  eno salt  with little water and add to the rawa batter. Mix. Do not over mix. Keep the batter in side the steamer and close it with a lid. Let it cook for  10 to 15 minutes. Insert a wooden stick and check. If it is  coming out clearly your dhokla is ready.

Heat a pan add oil. When it is hot add mustard seeds. When it is crackled add sesame seeds, chopped green chillies, curry leaves and asafoetida. Mix well . When it is ready add 1/4 cup of water. Add sugar. when water started boiling pour this over the shokla evenly.

Garnish with coriander leaves.
