Puttu is a traditional and popular breakfast dish of Kerala prepared with rice flour and coconut. Puttu is usually served with kadala curry, Banana ,sugar and pappadam also a good combination for puttu. Puttu is made in puttu kutti (Cylindrical vessel for steaming puttu). Now a days varieties of puttu kutti is available in the market. Bottom portion vessel is filled with water and top long portion filled with rice flour and steam cook. I used my small pressure cooker for bottom portion.. Let us see how to make soft puttu.
Preparation time approx 20 minutes.
Ingredients.
- 1 cup puttu podi.or little fried rice flour. ( i used ready made powder)
- 1/4 cup grated coconut
- salt to taste.
- water to mix.(approximately 1 cup).
- 1.4 tsp ghee (optional)
Method.
Take a bowl and add rice flour. Add salt. Add water slowly. Do not add full water. Mix it with hands.
This step is most important.
Take the rice flour and hold it tightly. It should become a lump. When you leave it loose it should crumble as shown in the picture below.
Add water to rice flour till you get this consistency. You may need 3/4 cup to 1 cup .
If you feel your rice flour is sticky or small balls in it just powder it in a mixer.
Add 2 glasses of water to a small cooker and boil it. Close it with cooker lid. Do not use the weight.
Take the puttu kutti Add 2 tbsp coconut gratings and then a hand full of rice flour. Again add coconut gratings and then rice flour . Fill the kutti as shown in the pictures. Above it, add a little ghee. This is optional.
When the steam is coming from nozzle of cooker lid fix the kutti on the nozzle and steam cook.
When it is ready it will release steam from the lid of the kutti. Cook for 2 to 3 minutes more..
Take out the kutti. Slowly push the puttu on a plate.
Serve with kadala curry or payaru curry or sugar and banana.
