Mix vegetable curry (no onion no garlic)

This mix veg curry is a very good combo for roti and jeera rice. I used cauliflower, peas and french beans and little capsicum  to make this. We can use potato, babycorn, carrots, mushroom or any vegetable of your choice, I have not used garlic or onion to make this. Let us see how to make this easy curry.

Preparationn time approx. 30 minutes.

Ingredients.

  • 1 small cauliflower
  • 200 gram of french beans
  • 200 gram of frozen peas.
  • 1  capsicum
  • 1 tbsp red chilly powder
  • 1tsp coriander powder
  • 1/2 tsp garam masala
  • salt to taste
  • 1 tbsp punch phoran ( fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed in equal parts.)
  • chopped coriander leaves.
  • 4 riped tomatoes.
  • 1 tbsp oil

Method.

Cut the vegetables in to pieces. Steam cook or cook cauliflower, peas and beans .Keepaside.

Do not cook capsicum

I pressure cooked the tomatoes . In this way we can make this curry very easily and we need to use little oil only.

In a non stick pan add 1tbsp oil and heat . Add punch phoran. Let it fry for few seconds. Now add the cooked tomatoes and fry. Fry till all water absorbs and it will become a lump. This will take 5 to 7 minutes. Add red chilly powder, dhaniya powder, salt,garam masala and mix well . Now add the capsicum and cook for 1 minute. When the capsicum is done add all cooked vegetables to it. Add chopped coriander leaves.Mix well and saute. Switch off the stove .

If you need a gravy type, after adding all dry masalas to tomatoes add capsicum saute for  little time then add  water and boil . When the gravy is boiling add all  cooked vegetables and coriander leaves.
