Puran poli is an Indian sweet flatbread from many regions of India .Puran poli is made for all festivals in Maharastra and Gujarat. But the method is slightly different in both places. Some are making the stuffing with channa daal and jaggery and roti is made with all purpose flour . In gujarathi style inside stuffing is made with thuar daal and sugar. Puran poli is made with thin wheat flour rotis with a delicious puran stuffing in the middle. Today i have used little all purpose flour also to make this.
Let us see how to make this sweet dish.
Preparation time approx 30 to 40 minutes.
soaking time 1hour.
- 1cup thuar dal soak in water for 1 hour.
- 1cup sugar. or as per your taste. I always prefer more sweet.
- 1/2 tsp cardamom powder
- 1/2 tsp turmeric powder.
- 1 cup wheat flour
- 2 tbsp all purpose flour ( optional).
- 1/2 cup plus 1tbsp water to knead.( adjust the water as per your need)
- Ghee for making poli.
Mix wheat flour and all purpose flour well. I have added all purpose flour to get a more soft dough. We can omit this also. We have to make very soft dough for this sweet dish.
Slowly add water little by little and make a soft dough. Do not add full water at first. If needed more water and make. Keep aside.
Take thuar daal and wash very well. Add water just above the thuar daal and add turmeric powder . Pressure cook this. There should not be too much water.
Now take out the cooke daal and keep aside. When it is cool grind both thuar daal and sugar. This is the easy way to make puran the stuffing.
In a heavy pan add 1 tbsp ghee and melt. Add the thuar and sugar mixture and stir well. Keep the stove on medium and stir this mixture till it become a thick dough.
You will get a non sticky dough and it will not stick to the bottom of pan. Switch off the stove and keep aside.
When it is cool make equal size small balls out of this mixture and keep aside.
Make equal size balls of atta as shown in the picture and keep aside.
Take one wheat flour ball and dust little wheat flour and make a small puri size roti,
Keep one ball size puran in the middle of the puri and close the edges to cover the puran.
Dust little wheat flour on the stuffed ball and make round shape roti with your fingers to get spread the puran or stuffing equaly to all sides of roti.
Once you spread with fingers you can use a rolling bin to roll it and make roti.
Heat a tawa.
Put one poli . Keep the stove on medium. Now take one spoon of ghee and pour over the poli and cook.
When one side is cooked flip it to other side. Cook the other side. Pour little ghee on the other side also.
Take out from the stove. Make all the polis like this.
We can keep this for few days in fridge.
