Lemon rice.

Lemon rice is one of the popular varaiety rice from South india. It is offered as prasadam in many temples in Tamil Nadu. Lemon rice is very easy to make with very few ingredients and good option for lunch box. I used sona masoori rice to make this. We can use raw rice or basmati or even we  can use left over rice also to make this dish. Let us see how to make this .

Preparation time approx 20 minutes.

Method.

  • 1/2 cup rice. (sona masoori or raw rice or basmati rice)
  • 1 lemon or lime

 

For seasoning.

  • 3 tbsp ground nuts.
  • 3 tbsp thil oil. ( this will give more taste to this rice.)
  • 2 chopped green chillies.
  • 1/2 tsp mustard seeds
  • 1/2 tsp urad daal
  • 1/2 tsp channa daal.
  • 1/2 tsp turmeric powder.
  • 1/2 tsp asafoetida.
  • salt to taste.
  • few chopped curry leaves.
  • few chopped coriander leaves.

Method.

Cook the rice grainy and spread it in a plate and add few drops of oil and mix. Rice will not be sticky if we are doing like this.   I made in open pan to cook the rice.  I have added few drops of oil to cook. Then we will get grainy rice. Strain the water. Let the rice become cool.

Heat a pan add thill oil. When it is hot add ground nuts. Fry till it become crisp. Add mustard seeds.let it crackle.Now add both the daals. Let them change colour to brown. Add green chillies and chopped curry leaves. Fry for few seconds and add turmeric powder and asafoetida.Fry it. Now add rice and salt. Mix it well. Switch off the stove. Add lemon juice and chopped dhaniya or coriander leaves. Mix well .
