I have already posted 2 different varities of paniyaram. This one is very easy no need of fermentation or idly batter. We can make instantly and it is very spongy. We need very few ingredients to make this. I have added eno salt to make it more spongy. If you dont want to add eno omit this instead you can add soda or without eno or soda also we can make. Let us see how to make this.
Preparation time approx 20 minutes.
Soaking time 15 minutes.
Ingredients.
1 cup Idly rawa.
1/ 4 cup poha or flattened rice.
1/ 4 cup thick curd.
3 to 4 tbsp rice flour.
Salt to taste.
For Seasoning.
1tbsp oil.
1/2 tsp mustard seeds.
1 onion finely chopped.
1/ 4 cup grated carrots.
3 chopped green chillies.
1/ 2 cup any greens or coriander leaves
5 gram eno. ( optional)
Method.
Wash the idly rawa and keep. In a pot boil some water. Add this to idly rawa. Soak for 15 minutes .
Soak poha or flattened rice for 15 minutes.
After 15 minutes squeeze all water from rawa and grind this adding little water.
Now grind poha,rice flour curd spoon they. Add salt.
Mix both batters.
Now add chopped onions an,chillies,coriander leaves, grated carrots.
Heat oil and add mustard seeds when it started splutter pour this in batter . Mix well.
Heat paniyaram pan add little oil. Heat.
Add eno to the batter mix well. Pour one spoon of batter in the moulds. Close it with lid. When one side is ready flip to other side and cook.
Serve with any chutney.
