Pumpkin Flesh/ Mathan kudal chutney/ chammandi goes well with hot rice,roti, paratha, dosa, idly etc. Mathan means parangikkai in tamil. Using the inner flesh and seeds we are making this chutney or thogayal. We can use even the flesh of raw pumpkin 🎃. Pumpkin seeds are very nutritious. Let us see how to make this.
Preparation time approx. 15 minutes.
1/2 cup flesh and seeds of pumpkin.
2 tbsp coconut.
1 tbsp urad daal
5 red chillies
Small piece of tamarind.
1/4 spoon asafotedia
Salt to taste
3 curry leaves
2 tbsp coconut oil.
Heat coconut oil in a pan.
Scoop out the flesh and seeds from pumpkin 🎃 and keep aside.
When oil is hot add urad daal. Keep the stove on low flame. Fry till it turns brown. Add red chillies. Fry it. Take out these and keep aside.
In the same oil add flesh and seeds of pumpkin. Fry it. Let the raw smell goes
It will take 2 to 3 minutes. Add asafoetida and take-out .
Now grind all the ingredients without adding water.
If you find it is dry add very little water.Make a paste.
No need of any seasoning. If you like to season it you can do with coconut oil,mustard seeds 1 red chilly and curry leaves.
