Muringa ila or drumstick leaves are filled with vitamin c,potassium, protein, iron,amino acid which help to heal our body. Drum stick leaves juice are good for weight loss. Today I am going to give you a healthy curry which goes with rice,roti etc. Let us see how to make this healthy,easy,yummy dish.
Preparation time approx: 20 minutes
2cup tightly packed muringa ila/drumstick leaves.
3 tbsp cooked moong daal.
2 tbsp coconut gratings.
2 green chillies ( adjust spice level)
1/4 tsp jeera.
3 tbsp finely chopped onions.
2 tbsp chopped tomatoes.
1/ 4 tsp turmeric powder
1 tbsp coconut oil.
1/2 tsp mustard seeds.
1 red chilly.
1/ 2 tsp urad daal
1/4 tsp asafoetida.
3 to 4 curry leaves.
In a pan heat oil. Add mustard seeds. Let it start crackling. Add urad daal,red chilly and asafoetida. Once it becomes brown add curry leaves. Now add onions and fry till become transparent. Add tomatoes. Fry this for few seconds in slow flame.
In the meantime grind coconut, jeera and chillies in to a fine paste adding little water.keep aside.
Once tomatoes become mushy add chopped drumstick leaves. Saute this well. Add turmeric powder. Add cooked mashed moong daal. Add half cup water and salt . ( adjust the water according to the consistency of the curry. I made thick curry ) .Cook the drumstick leaves well . Add coconut paste and mix well. Do not cook for longer time after adding coconut paste.
Switch off the stove. Serve with rice or roti.
Option. If you want to add garlic you can add with onions.
