Spinach has lot of vitamins and minerals which helps us to fight against many diseases. It also defends your body from other things that can hurt you, like toxins. I got 5 bundles of palak. Thought of trying pulao for lunchbox. This recipe is very simple. You can have this with any raita or tomato kuruma. Let us see how to make this.
Preparation time 20 to 30 minutes.
Ingredients.
1cup long grain basmati rice.
2 bundles of palak.
1 big size onion sliced.
1 tsp ginger garlic paste.
3 tbsp peas
3 tbsp carrots cut in to small pieces
3 tbsp capsicum cut in to pieces
6 to 7 pudina leaves.
3 tbsp coriander leaves.
6 to 7 green chillies .
Salt to taste.
1 tbsp ghee1 tbsp oil.
Small piece of cinnamon
4 cloves
1 big bay leaves.
1 star annise
1 badi elaichi/ cardomom.
1 tsp jeera
2 tbsp broken fried cashewnuts
Method.
Wash rice and soak in water for at least 15 to 20 minutes.
Heat 1 litre water add little sugar. Add washed palak. . After few seconds take out the palak and put in cold water.
Grind the palak with dhaniya,pudina leaves and green chillies. Make a paste. Do not add much water.
Heat ghee and oil n a kadai. Add jeera,cinnamon, bay leaf, clove,star annise, badi elaichi. Fry this. Add ginger garlic paste. Fry till raw taste goes. Add sliced onions. Saute till onions are shiny. Now add ground paste of palak. Fry this till oil ooze out. Add all veggies saute for few seconds. Drain the water from rice. Add this to palak. Add salt. Saute everything for few seconds. .
Add 2 cups of water. Close it with a lid and cook on medium fire.
Garnish with fried cashew nuts.
Option. If you likes to add garam masala you and add after adding rice.
