Kothamalli sevai/ coriander sevai.

Sevai is one of the popular breakfast or dinner recipes of kerala and Tamilnadu. We have to make plain sevai. With this we can make many varaities of sevai. I have posted how to make sevai in traditional authentic way in my blog. Please do check if you wish.

Today I made kothamalli sevai with easy ready to make sevai. I used 777 brand instant sevai.

Let us see how to make this easy breakfast/ dinner dish.

Preparation time approx 20 minutes.

Ingredients.

2 cups Ready made sevai .

1/ 4 cup peanuts.(with or without skin)

1 small bundle of coriander leaves.

1 tbsp lemon juice.

7 to 8 Green chillies.

1/2 tsp jeera.

A tiny piece of ginger

3 tbsp gingelly oil

1/2 tsp mustard seeds.

1tsp channa daal

1 tsp urad daal.

1/4 tsp asafoetida.

Few curry leaves.

Method.

Make ready made sevai as per instructions on the packet and kero. Make sure it shouln’t be mushy.

Grind coriander leaves, ginger, green chillies and jeera .Grind smoothly adding little water. Make a smooth paste.

In a pan add gingelly oil and heat. Add mustard seeds. When it started crackling add peanuts and fry . When it started roasted add channa daal, urad daal and curry leaves. Let the daals become golden brown. Add asafoetida and mix. Add the coriander paste. Fry this on low flame. Raw smell should go. When the full water evaporates add salt . Now add cooked rice noodles. Mix well and switch off the stove. Add lemon juice. Mix well.

Serve with coconut chutney.
