Little millet/samai lemon rice.

Millets are powder house of nutrients. There are many types of Millets available. Each millets have different health benefits. Millets are gluten-free. Hence we can opt this for rice. Today I made lemon rice with little millet or samai or sago.

Little millets are full of protein and fiber. Because of this benifit it’s good for weight loss. Little millets are diabetic friendly and a good diet for pcod.If you prepare samai rice in advance you can make variety of dishes .Let us see how to make this super healthy dish.

Preparation time approx 10 minutes.

Soaking time. 2 to 4 hours.

1/ 2 cup little millet/ samai rice.
1 cup water.
1 lemon juice. Or 2 tbsp lemon juice.
2 tbsp peanuts
2 tbsp broken cashewnuts.
3 green chillies chopped.
One small piece ginger. Chopped.
2 tbsp chopped coriander leaves.
Little curry leaves.
3 tbsp thil oil/ sesame oil
1 tsp mustard seeds.
1 tsp urad daal

1 tsp channa daal
Salt to taste.
1/ 2 tsp turmeric powder.

.Method.

Wash the millet and soak for 2 hours.
Boil 1 cup water. Add salt. Once the water started boiling add samai rice and reduce the flame to low and cover cook.

It will be ready with in 10 to 12 minutes. Mix well.


Heat the oil and add mustard seeds. Let it crackle. Add peanuts,cashewnuts and both daals. . Let it become brown. Add chopped chillies, ginger, curry leaves. Saute well. Add turmeric powder. Now add cooked samai. Add salt if needed. Add lemon juice. Mix well. Garnish with coriander leaves.

Serve with any pickle.
