Raw Mango Rice

Raw mango rice is very simple easy to make lunch box dish. We need not have any side dish to go with this. For more tasty and healthy method I have added some vegetables. Let us see how to make this. Quantity of raw mango may depend on its sourness.

Preparation time approx: 15 minutes.

Ingredients.

1/2 cup rice ( I used basmati. You can use any variety according to your choice).

A hand full of peanuts. ( you can increase or decrease according to your choice)

1/3 cup grated raw mango ( may vary the quantity according to its sourness)

2 tbp chopped capsicum

3 tbsp finely chopped carrots.

3 tbsp frozen peas.

3 tbsp finely chopped beans.

1/2 tsp turmeric powder

For Seasoning.

2 tbsp thil oil.

1/2 tsp mustard seeds.

2 tbsp peanuts.

1tsp channa daal

1 tsp urad daal

3 chopped green chillies

1 red chilly

1/2 tsp asafoetida.

Few chopped curry leaves..C

Coriander leaves for garnishing.

Method.

Cook the rice. Spread on a plate add little this oil mix and keepaside.

In a pan heat oil. Add mustard seeds. Let it crackle. Add peanuts and fry till it is roasted finely. Add channa and urad daal. Let them become brown in colour. Now add chopped green chillies , red chilly and ginger. Saute this. Add curry leaves. Now add grated mangoes. Fry till raw smell goes. Add asafoetida and turmeric powder. Saute well. Add enough salt. Mix well. Now add chopped veggies. Cook on low fire. Cover and cook .

When veggies are cooked add cooked rice. Add salt. Mix well. Garnish with coriander leaves
