Sabakki/ Sabudhana Idly.

Sabakki/ Sabudhana idly is one of the popular breakfast items from Karnataka. One of my cousin Uma is living in Bangalore. I got this recipe from her. It is very soft and spongy instant idly. Any chutney will go with this. I paired with coconut chutney. Let us see how to make this.

Preparation time approx: 20 to 30 minutes.

Soaking time overnight.

Ingredients.

1/2 cup sabudhana/ javvarisi

1 cup rawa/ suji

1 cup yogurt

1/2 cup water( may vary the quantity)

For Seasoning.

2 tbsp oil

1/2 tsp mustard

1 tsp channa daal

1 tsp urad daal

Few chopped curry leaves.

Chopped green chilli

Chopped coriander leaves.

Salt to taste

5 grams of eno salt.

Method.

Wash and soak sabudhana over night or minimum 5 hours.

Heat oil add mustard seeds. Let it splutter. Add channa,urad daals. Let it become brown. Add green chilli, curry leaves. Saute.

Add rawa or suji. On medium flame roast for 1 or 2 minutes.

Let it become room temperature. A

Add sabudhana. Add salt and yogurt or curd.

Mix well. Add water slowly. Batter shouldn’t be watery. Keep aside for 15 minutes.

Add eno and little more water. Mix well. Add coriander leaves. Mix. I

In the meantime boil water in steamer.

Steam cook for 10 minutes.

Soft spongy idly is ready

Appy oil on idly mould and pour the batter.
