Arachuvitta sambar (sambar without using sambar powder. )
Arachuvitta sambar is popular traditional dish in South Indian families. Arachuvitta means freshly ground. For this sambar we are not using sambar powder. We have to fry all masalas and ground them freshly. My son always love this sambar only. For this sambar we are using less of thuar dhal and use little coconut to make the gravy thicker. Taste will be totally different from normal sambar. ( using sambar powder).We can use any vegetables.If you want to use only one vegetable you can do so. ladies finger, white pumpkin,yellow pumpkin, carrot, radish,potato, yam,shallots,drumstick,chow chow are coomon vegetables to make this sambar. Let us see how to make this.
Preparation time approx30 minutes
Ingredients
- 1/2 cup thuar dhal or arhar dhal cooked and mashed.
- 1/4cup fresh coconut
- 2 tsp coriander seeds
- 11/2 tsp channa dhal
- A pinch of methi
- One small piece of hing or 1/4 spoon hing powder
- Little curry leaves
- Oil for frying
- Lemon size tamarind soaked in water
Vegetables
- Drumsticks( cut into longer pieces)
- Carrots
- Yellow pumpkin
- 1 small potato
- 6 ladies finger. ( wash wipe and cut in to medium size )
- 1 tbsp coconut oil
For seasoning
- 1 tbsp coconut oil
- 1/2 tsp mustard seeds
- 1 red chilly
- Few curry leaves
Method
Squeeze tamarind and take the juice . keep the tamarind juice. ( around 1 cup)
Pressure cook thuar dhal mash and keep.
Heat 1 tsp coconut oil.Using this oil fry all ingredients one by one.
Add channa dhal fry till brown colour. Take out and keep
fry coriander seeds till nice aroma comes take out and keep
Fry methi till it turn colour or pop up. Be careful it should not over fry. Bitter taste will come
Fry red chillies. fry in low flame. Take out and keep.
(If you are using powder hing add now with coconut and take out immediately)In small mixi add everything except coconut. Powder everything. Then add fried coconut and powder it. Now you can add little water to the powder and make it a nice paste.

Add tamarind water. Add salt and haldi. Cook. Add water if tamarind juice is less.
Cook the veggies.

Then add coconut masala paste.
Add water. The gravy should be in medium consistency .
Just boil. Switch off gas. After adding the coconut paste do not cook for long time. Taste will change.
Add little dhaniya leaves.
For seasoning
Heat 1 tbsp oil. Add 1/2 tsp mustard
When it started crackling add little curry leaves and 1 red chilly. Pour over the curry.
You can have this sambar with hot rice ,dosa or idly.
