Coconut burfi or thengai burfi in tamil is one of the popular and easiest sweet dish of south india. We need only very few ingredients to make this burfi. I learnt this from my amma who is an expert in making coconut burfi. Let us learn how to make this burfi.
Preparation time approx 20 minutes
Ingredients:
- 2 cups freshly grated coconut. ( grate only white part of the coconut)
- 1 1/2 to 2 cup sugar according to taste.
- 3 tbsp ghee.
- 1/4 spoon cardamom powder
Method:
In a heavy non stick pan add sugar and little water.( around 1/2 cup)
Boil water and sugar. Let it become little thick.For checking the sugar syrup take little sugar and put it in normal water. You should be able to make it round shape, not very hard . very soft round ball consistency.
Now in this stage add grated coconut. ( if you want you can just crush the coconut in mixi and add)
Keep in medium flame. when it become thicker add the ghee. It will absorb the ghee.
Keep on stirring.
You can see bubbles forming and the mixture will be thick and it will not stick on the sides of the pan.
Add cardamom powder and stir well.
Now switch off the gas.
Put the mixture in a greased plate and spread it evenly.
when it become little cool cut it in to desired shapes and serve.
Option
You can add fried cashew nuts before switching off the gas.
