 Nendran kaya upperi or Banana chips

Nendran kaya means plantain in English. Nendran kaya  variety of banana is used for making chips. In Kerala generally we are using coconut oil for deep frying this chips. You can use any oil of your choice.  We are slicing the banana directly to hot oil using a slicer. You can slice the banana on a chopping board also. Then add the chopped slices one by one to hot oil. When we are slicing the banana directly to oil it will not stick together.Apply coconut oil on both hands before peeling the banana. Let us see how to make this.

Preparation time approx. 45 mints

Ingredients:

  • 5 pieces of raw plantain or nendran kaya
  • 1 tsp salt
  • 1/4 spoon turmeric powder
  • oil for deep fryingTake below 1/4 cup of water add 1 tsp salt and 1/4 spoon of turmeric powder. Mix it well and keep aside.

Make a straight slit on banana.

Then just open the skin.

Put the bananas in water .

Heat oil. Just add one piece of banana and check whether the oil is hot.

Take one banana from water wipe it.

Using slicer slice the banana’s directly to hot oil.

you can use carrot and potato slicer also.or cut the banana in to very thin round slices.Put this in hot oil one by one.

You can see the bubbles in oil.

At this stage reduce the flame and add 3/4 tsp turmeric and salt water directly to oil.

You can hear some sounds. Do not worry.

your chips is ready when the sound reduced .

Remove from oil and spread on a tissue paper

Store in an air tight container. It will stay for a month.
