Sevai is one of the popular traditional dish of south India. Sevai is the name of steamed rice noodles.Once you prepare the sevai we can make varieties like tamarind sevai, lemon sevai, tomato sevai, sweet sevai etc. Sevai with pulisseri is most popular break fast or dinner dish at home, I have grown eating this dish. Best when had with pappadam. We can eat sevai with any side dish of your choice. Like idli, sevai is also a steamed dish. Sevai is very healthy, low calorie, no oil breakfast dish.
Preparation time approx 40 minutes:
Soaking time overnight
Grinding time 40 to 45 minutes
Ingredients
- 3 cups of boiled or idly rice.
- We need sevai press to make sevai.
Soak the rice for 7 to 8 hours or overnight.
Next day morning grind the rice smoothly. I used my wet grinder for grinding. We can grind in mixer grinder also.
Add salt.
Heat a bottom thick pan. Add 1 tsp coconut oil. Add the ground batter. With a spatula mix the batter well. Do it continuously.
It will become a thick dough like roti dough.
Heat a big pan or idli cooker. Add some water in the cooker and heat.
Make a balls from the dough and arrange in idli plate or a steamer.
Once the water started boiling keep the idli plate inside the cooker. Steam this like idli. After 10 to 12 minutes prick the balls with a stick or needle.
It should come out cleanly. Then your rice balls are ready.
Keep the stove in very low.
When the balls are hot put one or 2 in the sevai press.Using sev blade press it.
We will get white rice noodles or sevai. Make all the balls like this.
Spread in a plate and keep to cool.
At this stage we can use the sevai to make variety sevai.
I made pulisseri and pappadam as side dish.
