Pudalanga Mezhukku Puratti or Snake Gourd Fry

In South Indian houses lunch will include sambar, rasam and one subji. Today I made pudalangai subji or mezhukkupuratti in Opos style.

Opos means one pot one shot. I learnt this opos  method from Mr. Rama krishnan. I used flash cooking method to make this recipe. Thank you Mr. Rama krishnan for your wonderful method of cooking.

In opos method we can make any subji or curry with in few minutes. It’s a boon to all.

Pudalanga is snake gourd. Mezhukkupuratti means any vegetable sauted with little oil. This is a very simple recipe which can make with in 4 minutes. Let us see how to make this.

Preparation time approx 4 minutes.

Ingredients

  •  300 grams sliced pudalanga.  ( I used Bahrain local pudalanga which is very tender.)
  • 1 tsp salt
  • 2 tsp water
  • 1 tsp coconut oil
  • 1/2 tsp chilli powder.
  • 1/4 tsp turmeric powder

Seasoning

  • 1/2 tsp mustard seeds
  • 1/2 tsp urad dhal
  • 1/2 tsp channa dahal
  • some curry leaves
  • A pinch of asafoetida

Method

In a 2 liter pressure cooker add 2 tsp water, 1 tsp coconut oil. Spread the sliced pudalangai . Above this add salt, chilli powder and turmeric powder.

Pressure cook for 2 whistles. It took 4 minutes for me.

Release the pressure manualy.

In a frying pan add 1 tsp oil heat it. Add seasonings. When mustard started cracking add asafoetida.Then add both the dhals and fry till it turns brown.  Now add pudalanga and mix well.

If u want you can roast for few more minutes.
