Tried my hand at a mixed salad bowl for dinner, I usually love making salads and the dressing. But this one has only salt and pepper with a dash of Italian seasoning. Let’s look at the simple steps
Ingredients:
- 1/2 cup macaroni (use wheat macaroni or penne for more healthy version)
- 1/2 cup chopped carrots
- 1/2 cup chopped beans
- 1/2 cup cauliflower florets
- 1/2 cup broccoli florets
- 1 cup sliced mushrooms
- 1/2 cup sliced cabbage
- 1/2 cup capsicum
- 1/2 cup chopped celery
- 1/2 cup cubed firm tofu
- 1 big white onion sliced
- 2 fresh chopped garlic pods
- White or black pepper powder as per your taste
- Salt as per your taste
- 1/2 tsp Italian seasoning
- 1 tsp soy sauce
- 2 tbsp extra virgin olive oil
Method:
Cook macaroni or penne with salt in lot of water. Strain and keep.
In microwave half cook beans and carrots or in hot water on stove half cook strain water and keep.
Blanch broccoli and cauliflower strain and keep.
In big pan heat olive oil add chopped garlic. Fry for few seconds then add onions.saute for few seconds ,add capsicum saute for 1 minute.now add cabbage. Saute.then add mushroom. Saute till it become dry.
Add all veggies, salt and pepper. Saute nicely. Add firm soy cubes and Macroni. Mix well.
Add soy sauce,Italian seasoning.
Garnish with chopped celery.
Tips
You can use any veggies of your choice.
You can use paneer or feta cheese instead of tofu
You can add fresh basil leaves,Rosemary ,oregano.
You can use all boiled water from veggies as stock for a soup.
