 Vendakka mezhukkupuratti  or ladies finger fry

In South Indian thali side dish curries are most important. Vendakka mezhukkupuratti or bindi fry is a dry subji without onion and garlic. We can make this with in 10 to 15 minutes. Let us see how to make this easy subji. I cooked the subji in microwave and then added besan and mixed.In this way we can make vendakka with less oil.

Preparation time aprrox 15 minutes.
 Ingredients.

  • 500 gram ladies finger.
  • 1/2 tsp red chilly powder ( Kashmiri chilly powder)
  • 1/4 spoon coriander powder
  • 1/4 tsp sambar powder optional
  • 1 tsp besan or channa gram dal powder.
  • Salt to taste

For seasoning.

  • 2 tbsp oil
  • 1/2 tsp mustard
  • 1/2 tsp urad dal
  • 1/2 tsp channa dal
  • A pinch of asafotedia
  • Few curry leaves.

Method.

Wash the ladies finger. Wipe the water with a towel. It should be dry.
Cut in to any shape of your choice.

Microwave the vendakka for 3 minutes. ( make sure  vendakka is dry).Sprinkle the besan to ladies finger. Mix very well.

Heat a pan.Add oil and heat. When it is hot add mustard seeds. Let it crackle. Now add urad and channa dal. Let it become brown. Add asafotedia and curry leaves. Keep the stove on medium flame. Now add the ladies finger.
Add salt and all dry powders..Saute. Let it roast for few minutes.
