Milagu kuzhambu.
This is one of the very popular kozhambu for tamil brahmins. I have not added onion or garlic in this kozhambu. This curry or kozhambu goes very well with hot rice.I have added more pepper in this curry. Pepper has many medicinal values. So it is apt for a rainy day or when you are having cold and after delivery.
Let us see how to make this simple kozhambu with very few ingredients with in few minutes.
Ingredients.
- 1 tbsp black pepper
- 2 red chillies
- 1 tbsp coriander seeds.
- 1 tbsp thuar dal.
- 1/2 tsp turmeric powder.
- 1/2 tsp hing powder.
- a small lemon size tamarind (soak in water take the juice)
- 1/2 to 1 tsp jaggery powder. adjust according to your taste.
- salt to taste.
For seasoning.
- 4 tbsp+ 1/2 tsp gingely or thil oil.( Gingely oil will give more taste. you can choose any oil as per your taste.
- 1/2 tsp mustard seeds
- 1/4 tsp methi seeds.
- few curry leaves.
Method.
In a pan add 1/2 tsp oil fry pepper and take out. In the same oil fry thuar dal till brown, then add coriander seeds, red chillies fry for few seconds. Sprinkle hing powder. Mix. Switch off the stove.
Grind all these adding little water in to a fine paste. Keep aside.
Squeeze the soaked tamarind and take juice.
Take a bowl add tamarind juice. Add the pepper masala ,salt turmeric powderand jaggery powder. Add some water. Mix well. Now you taste your mixture to check the taste. If the mixture is fine then proceed. If you want to add more spice or salt add now and mix.
Heat a pan add oil. When it is hot add mustard seeds. When it started crackling add methi seeds. Let it turn colour add curry leaves. Add the tamarind mixture. Let the mixture boil well and the raw taste go from tamarind. Kozhambu will start thickening at this stage.
Switch off the stove. Serve with hot rice.
