Ragi/ Finger millet Aappam

Ragi or finger millet is one of the most nutritious and healthy cereals.

Ragi is a whole grain that is gluten-free. It is packed with Calcium,good carbs,amino acids and vitamin D. It is good for diabetes and weight loss.

We can make variety of dishes with ragi or finger millet or naachni in Hindi .I tried aappam which is a popular food from Kerala.let us see how to make it.

Preparation time approx: 15 minutes.

Soaking time 7 to 8 hours or over night.

Fermentation 7 to 8 hours.

Ingredients.

1 cup Ragi seeds

3 tbsp whole white urad daal

1/2 tsp methi seeds.

1/4 cup brown or while poha.

1/ 4 cup fresh coconut gratings.

Salt to taste.

1/2 tsp cooking soda.

1 tsp sugar.

Wash and soak all the ingredients other

Method

than coconut over night.

Morning grind it smoothly adding coconut. Add water little by little. Make a smooth batter. Like dosa consistency. Add soda and mix well. Ferment the batter for 8 hours. Let it come up very well. Before making aappam add salt and sugar in the batter. Add little more water. Mix well. The consistency is slightly liquid.

Heat a curved pan . Take a laddle full batter pour in the middle of the pan. Take out the pan hold it tightly and tilt it to get round shape.

Now close this with a lid. Cook only one side on medium heat. .

Remove from the pan and serve with vegetable stew or chutney of your choice.
