Ridge gourd or peerkingai in tamil has many health benefits. It promotes weight loss, enhances vision ,relieves constipation, remedies anemia etc.
With in few minutes we can make this curry in pressure cooker. It goes well with all kind of tiffin varities, roti,puri, rice etc.
Let us see how to make this easy kadasal.kadasal means smashing the vegetables with a masher.
Preparation time approx 10 minutes.
2 cups Ridge gourd. ( peel the skin and cut)
1/2 cup shallots./ chopped onion
3 garlic pods.
2 big size tomatoes cut in to pieces.
1/2 tsp turmeric powder
3 green chillies.
1 tsp red chilly powder
1/2 tsp asafoetida
Small piece ginger.
Few chopped curry leaves.
Chopped coriander leaves
Salt to taste.
1 tbsp oil
1/2 tsp mustard seeds.
Heat a small pressure cook and add oil. When it is hot add mustard seeds. Let it splutter now add asafoetida, green chillies, curry leaves, ginger and chopped garlic. Saute for few seconds. Now add onions. Saute for 1 minute. Add tomato pieces and ridgegourd pieces. Add salt and turmeric powder and chilly powder. Mix well. Add enough water to cook. Do not add too much water. Pressure cook for 3 whistles.
Let the pressure goes manually. Now open the lid and mash the curry with a potato masher. Garnish with coriander leaves. Serve.
