Bajra/ Pearl millet paratha

No wheatflour or maida.

Bajara or pearl millet, Kambu in tamil is known for its health benefits. It is gluten-free millet. It mainly helps for weight loss , diabetic friendly, lowering cholesterol. In winter time we will feel full when we are consuming it.

I have added few veggies to make this paratha more tasty. You can add any veggies,greens or daal of your choice.

Let us see how to make this paratha.

Preparation time approx 20 to 25 minutes.

Ingredients

1/2 cup bajra powder.

1/4 cup grated carrots

1/2 cup grated louki or bottle gourd.

1/4 cup chopped onions

1/4 heaped cup finely chopped coriander leaves

Chopped green chillies

Chopped ginger.

1/4 tsp turmeric powder.

1/4 tsp pepper powder

1/2 tsp caram seeds ( Omam)

1/2 tsp jeera.

Salt to taste.

1/4 to 1/2 cup hot water.

Oil / ghee to make paratha.

Method.

In a big bowl add all ingedients except water and oil.

Mix well with hands. Louki and onion will ooze water. So add hot water with tbsp. Mix and make a dough . You should be able to spread the dough with hands on a sheet or cloth. Till you are getting this consistency add hot water. Make dough and keep for 10 minutes.

Divide the dough equally and make round shape balls. You may get 4 or 5 parathas out of this.

In a wet cloth or aluminum foil or banana leaf keep paratha balls. Wet your hands and spread it. Heat a iron tawa. Do not use non stick tawa. Put the paratha upside down on hot tawa. On medium fire cook. Pour oil or ghee. Cover cook. Flip it and cook both sides.

Serv with pickle and curd or raita
