Bombay halwa or Karachi halwa;
Karachi halwa is popular in Mumbai. I learnt this recipe from another food group. I tried this recipe many times at home. Let us celebrate our Diwali with this yummy easy to make halwa.
Preparation time approx 15 to 20 minutes;
Ingredients;
- 1 cup corn flour
- 2 cup sugar
- 1/4 cup dry fruits. (I added cashew, badam, pistachio)
- 1/4 cup ghee
- Food colur of your choice ( generally reddish orange, yellow and green colts are used)
- 1/4 spoon cardamom powder.
- 3 cup water
Method;

Mix cornflour , 1 cup of water and food colur. Mix everything without lump and keep.
In a heavy bottomed nonstick (preferable ) or in any pan, add 2 cups of sugar and 2 cups of water and mix well. Now switch on the gas in medium flame and stir well until all the sugar melts in water. Reduce the gas to low when small bubbles start forming. There is no particular sugar syrup consistency for making this halwa .
Now add corn flour mixture slowly to the sugar syrup and continuously stirring by using a whisk. Mix it carefully to ensure that there are no lumps . Keep whisking the mixture.
You have to add ghee little by little, otherwise corn flour can absorb more and more ghee and it will not cook properly.

Keep on stirring. Add cardamom powder
When the halwa becomes thick and leaves out ghee add half quantity of the nuts to mixture and mix well and remove it from the gas

Transfer the halwa into greased plate .

Garnish with the remaining dry fruits.
let it cool completely.

Cut in to desired shapes.

Tips
You can reduce the sugar to 1 1/2 cups.
For 1 cup cornflour plus 1 1/2 cup sugar add 2 1/2 cup water.( mix 1cup cornflour and 1 cup water.11/2 cup sugar with 1 1/2 cup water)
